Viral, two-ingredient recipe sends Aussies into a frenzy: 'I'll be eating this forever'

If you’re on the hunt for easy protein hacks, a new viral cooking trend on social media has seen creators across the globe making a foolproof, at-home flatbread typically using only two ingredients – and it yields about 20g of protein per serve. The secret? Cottage cheese.

TikTok is being inundated with videos showcasing how to create the simple snack - making this the must-try recipe of the winter. And, if the comments are anything to go by, it is as delicious as it is easy to make!

TikToker Molly Thompson, known for her cooking content and PCOS-friendly recipes on her account @whatmollymade, recently shared a video to her 27,000 followers trying the viral recipe.

“I tried the viral cottage cheese flatbread and I’ll admit, I was sceptical at first but this flatbread went viral for a reason,” Thompson said in the video, which has now been viewed over 2 million times. “It's so easy and delicious, I’ve made it three days in a row.”

While it might seem unusual to make any kind of bread without flour, Thompson’s version of the popular recipe creates dough by simply blending a cup of cottage cheese with two eggs. She also adds a teaspoon each of garlic powder and Italian seasoning for flavour, but it’s not essential to the recipe.

Once blended, Thompson poured the cottage cheese dough mixture onto a parchment-lined baking tray and baked in the oven for 35 minutes at 180 degrees celsius, before allowing the flatbread to cool for 10 minutes. The recipe yields two flatbreads.

“I put deli chicken on mine with dill mayo, fresh sliced tomatoes, onion and lettuce,” she said while assembling her sandwich. “It is 10 out of 10.”

Thompson’s followers flooded the comments section of the video with their thoughts on the recipe after trying it – and the reviews were mixed.

“I’ll be eating this forever,” one commenter wrote.

“Definitely try adding some parmesan and mozzarella, makes it even better,” another suggested.

“I’ve made it three times this week,” a third commented. “It’s amazing!”

Others also suggested additions such as garlic powder and cheese, or cooking it in a waffle iron or air fryer. However there was also advice against using fat-free cottage cheese, as it could lead to your flatbread falling apart.

“I tried a couple times and the bottom was always still wet,” one commenter complained, while a handful of others agreed.

“Mine got stuck on the paper,” another person wrote, to which other commenters suggested spraying the parchment paper with an oil spray before baking.

While there were comments stating that the flatbread seems to merely be a repackaged branding for a basic omelette, it also doesn’t appear to be going anywhere anytime soon, with hundreds of videos on the app showing variations of the recipe.

Another cooking TikToker by the handle @healthylittlepeach received more than 5 million views for her cottage cheese flatbread recipe, which was fairly similar to Thompson’s but with onion powder as well.

Popular Armenian-American cookbook author Nicole Keshishian Modic also tried out the dish, but incorporated a few spoonfuls of grated parmesan cheese and two cloves of garlic in addition to a teaspoon of Italian seasoning.

“It is actually so good,” Keshishian Modic said in the video. “And unlike some of these other wraps that I see people posting, it’s really sturdy and doesn’t fall apart.”

Aussie recipe developer Victoria Minell posted a version of the flatbread to her over 1 million followers as well. However she simply placed the cottage cheese directly on a parchment-lined baking tray on its own – without blending it with eggs – then sprinkled it with Mingle spicy everything bagel seasoning, and baked for 40 minutes. The result was a crispy, cheesy looking flatbread which she filled with avocado, tomato, bacon and a fried egg.

Minell said in the video’s comments section that the recipe worked well without adding egg. But this would obviously reduce the recipe’s protein count – so it's really up to you whether you prefer a high-protein recipe, or one without an eggy taste.
