'Ted Lasso' May Be Back for Season 4! Celebrate by Making a Batch of the Official 'Ted Lasso' Biscuits

Ted Lasso, the Apple TV+ series that rocked the streaming world starting in 2020, is rumored to be coming back for season 4 very soon. This is great news for fans craving more of ever-positive soccer coach Ted Lasso (Jason Sudeikis) and his team.

For those who haven't watched the show, Ted Lasso's Shortbread Biscuits (or cookies, as we call them in the U.S.) are a key part of the plot. Ted is trying to win over Rebecca, the owner of the English football team he’s suddenly coaching, and presents her with a box of the most amazing shortbread biscuits. She thinks they're store-bought, but it's soon revealed that Lasso is baking the cookies himself. After that, he shows up to Rebecca's office often carrying a small pink box of his homemade shortbread.

Although we never learned the official Ted Lasso shortbread biscuit recipe, here's a tasty shortbread cookie recipe for you to try—you'll get results similar to the ones Ted gave Rebecca!

You probably already have all the ingredients you need to make these traditional, unleavened Scottish biscuits like the Ted Lasso biscuit recipe. Unlike other many other biscuits, shortbread does not contain leavening, such as baking powder or baking soda.

How to Make the Ted Lasso Shortbread Biscuits

1. Sift dry ingredients into a small bowl. Cream butter and sugar in a separate bowl. Gradually add the flour to the butter mixture (on low speed, if using a mixer) scraping the sides of the bowl with a spatula, if necessary, until the dough sticks together.

2. Smooth dough into an ungreased 9x9 baking pan. Score with a fork and chill for about 20 minutes. Baking at 325 degrees for 20-25 minutes.

3. Allow cookies to cool before cutting them into pieces.

Ted Lasso Shortbread Biscuits

Ingredients

  • 1 cup (2 sticks) unsalted butter, room temperature

  • 2 cups all-purpose flour

  • ¾ tsp salt

  • ½ cup sugar

  • 1 tsp pure vanilla extract

  1. Preheat oven to 325°. Prepare a 9x9 baking dish; set aside. Sift together flour and salt in a small bowl; set aside. Place butter in bowl of electric mixer fitted with paddle attachment. Cream until fluffy, 3 to 5 minutes.

  2. Add sugar, and continue to beat until very light in color and fluffy, scraping down the sides of the bowl with a spatula, if needed, about 2 minutes more. Add vanilla. Mix. Add flour mixture, and combine on low speed, scraping with spatula if necessary, until flour is just incorporated and dough sticks together when squeezed with fingers.

  3. Pat dough into prepared pan. Score into finger-shaped pieces, prick with tines of a fork and chill about 20 minutes. Bake until firm and just starting to color, 20 to 25 minutes. Remove from oven and allow to cool. Once cool enough to handle, cut into pieces along scored lines.
