The World’s Newest Michelin 3-Star Restaurant Is Tucked Away in the English Countryside

The United Kingdom is on a fine-dining roll.

For the second year in a row, a U.K. restaurant has been upgraded to three stars in the region’s Michelin Guide. Moor Hall, chef Mark Birchall’s spot in Aughton, Lancashire, has achieved Michelin’s highest honor in the 2025 guide, Bloomberg reported on Monday. It’s the only addition in that category, bringing the total of three-star restaurants in the U.K. and Ireland to 10.

At Moor Hall, Birchall serves a produce-driven tasting menu that goes for £235 ($291) at dinner and £125 ($155) at lunch, Bloomberg noted. The dishes range from Isle of Mull scallops atop fermented grains with green tomato and caviar to local Dorset Sika deer with a ragout of forest mushrooms and liver whey sauce.

Farther down the list, just three restaurants were upgraded to two Michelin stars, Bloomberg noted. That includes two in London—Humble Chicken and the Ritz—and one in Hythe, Hide and Fox. Notably in that category, Anne-Sophie Pic’s La Dame de Pic retained its two stars, which it has held since 2020, but the restaurant will close later this week, on February 15, Bloomberg wrote. Located at the Four Seasons in London, the hotel and the chef said in a statement that they had agreed to “conclude their partnership,” which will result in La Dame de Pic disappearing from the Michelin Guide next year.

As for one-star restaurants, 22 spots were awarded that honor, an increase from 18 establishments last year. Just 10 of those new additions are in London, showing that other cities in the U.K. and Ireland are making an impact on the region’s fine-dining scene, Bloomberg noted. Edinburgh, for example, had two restaurants make the cut: Lyla and Avery. Last year, no restaurants from Scotland were added to the one-star category.

This year’s Michelin ceremony took place in Glasgow, as the company continues to spotlight towns outside of the major cities. That focus was reflected throughout the new additions and upgrades, with Cardiff also earning its very first Michelin star. And the expansion of Michelin honors was also evident in the cuisines represented, with the U.K.’s first stars for a Greek restaurant and a plant-based restaurant.

With a whopping 220 starred restaurants in total, the U.K. and Ireland have started 2025 off with a bang.
