The Super Easy Egg Bake That's Perfect For Hectic Mornings

Mornings in my house can feel like a whirlwind of getting everyone ready, packing bags and rushing out the door to get to school and work on time—it's a scene that plays out across millions of homes every morning. What We Love About This Cheesy Egg Bake

Andreev said she could eat these cheesy breakfast squares every day, and we can see why!

To make them, you put eggs, ricotta cheese, salt, onion and shredded cheese into a bowl and mix them together. Then add some flour and baking powder and give it another good mix.

Pour the mixture into a parchment-lined baking dish and bake for 20 minutes at 350°. Check your eggs at 10 and 15 minutes to make sure they aren't burning. Once they're done, you can cut them into squares and serve them with some toast or on a bagel for a quick, delicious and nutritious breakfast that will have you feeling full for hours.

This recipe is easy to whip together and the longest part is baking. You can use that time to pack your lunch, toast some bread or enjoy a cup of coffee before you have to rush out the door.

We also think this recipe would be a great thing to keep in mind for a weekend brunch dish. Serve the squares with a green salad, a fruit salad and you're done! We also suspect the squares would freeze well. Just make a pan on Sunday, cut them up, let them cool, then pack them in the freezer for the week ahead. So easy!

You can easily change up this recipe to give yourself something new every time you make it. You can add spinach, mushrooms, bell peppers and cherry tomatoes for a colorful, nutrient-packed dish. For meat lovers, include cooked bacon, sausage or ham for hearty, protein-rich bites. If you like a Southwest vibe, use pepper jack cheese, then add black beans, corn, diced jalapeños and top with salsa or avocado.
