The Genius Recipe That Has Us Rushing Out to Buy Trader Joe’s Frozen Hash Browns
As a mom with a packed fall schedule, I know how hectic dinnertime can get. Between school, sports and other activities, the last thing I want is to stress over what to make for dinner. That’s why I rely on meal prepping and freezer meals to keep meals stress-free. With a little prep, I can stock the freezer with slow cooker meals, casseroles and more that are ready to heat and eat.
I recently saw this incredible freezer breakfast from content creator @simplysarahhart and I knew it had to go in my rotation. It's simple and includes easy-to-find ingredients from Trader Joe's (or your favorite grocery store). She uses it as a breakfast freezer meal, which is genius, but you can use it any time of day and it would also be a great thing to have in the freezer for holiday breakfasts.

How to Make Freezer Hash Brown Breakfast Bake
In her Instagram video, Sarah places some frozen hash browns in a baking dish and toasts them. She doesn't mention where she bought them from, but Trader Joe's fan-favorite hash brown patties would be perfect here.
Next, she mixes together two cups of cottage cheese and one dozen eggs. After it's blended well, she adds some bacon, onions and shredded cheese, but you can add whatever you like. Think of it like making an omelet, and don't forget to season your eggs!
Once the hashbrowns are ready, you just pour the egg mixture on top and smooth it out. Cook for it about 30 minutes and let cool after it's done. Slice it into squares and it's ready for the freezer. All you have to do is place the squares in a large Ziploc bag and make sure all of the air is out before you freeze them.

A few people commented that heating these in the microwave makes the hashbrowns soggy, so using an air fryer is a better way to warm them. That's a very helpful tip!
