The Viral Recipe that Has Us Rushing to the Store to Buy Cornflakes
When it comes to snacks, it doesn’t get any more elite than something crunchy, chocolatey and sweet. And with the sheer amount of viral snack creations clogging our social media feeds on a daily basis, it’s nearly impossible not to go down the DIY snack rabbit hole at least once or twice a week. We love a good at-home reimagining of our favorite name-brand treats, and it's an even sweeter experience when one requires only a few ingredients to make.
No stranger to whipping up homemade treats that are both visually appealing and delicious, Amelia Ferrier recently blessed our feeds with her 3-Ingredient Cornflake Brittle that shares a shocking resemblance to the flavor and texture of a Butterfinger candy bar. Ferrier describes her creation as both “extremely addictive” and “very simple,” which are words that appeal to us all like presents on Christmas day.
The recipe, a combo of cornflakes, salted butter and brown sugar, comes together in just under 20 minutes. However, to make it really taste like a Butterfinger, Ferrier recommends breaking the brittle into smaller pieces and dipping each chunk in chocolate. How To Make Amelia Ferrier's Cornflake Brittle
For the detailed recipe, watch the video above, but we'll drop the general idea here. Preheat the to 350°F and line a baking tray with parchment paper. Grab a large heat-proof bowl and add your cornflakes.
In a pot, heat butter, brown sugar and flaky salt. Let the mixture cook for a for a few minutes, then pour it over the cereal. Stir the mixture gently. You want to make sure the cornflakes are thoroughly coated but you don't want to stir so aggressively that you crush the cereal.
The cereal mixture goes on the parchment-lined baking sheet, where you'll bake it until it's golden brown, which should take 10 to 15 minutes. “Make sure you bake it sufficiently, otherwise the toffee won’t hold together and snap once cooled,” Ferrier says. She also mentions that the cornflake mixture it can burn easily, so also keep a close eye on it, as all ovens bake a bit differently.
As the cornflake brittle cools, melt some chocolate in a pot on the stove or in the microwave. Break the brittle into pieces and dip them in the melted chocolate. Using a fork, transfer the chocolate-dipped brittle to another parchment paper-lined baking sheet, sprinkle with flaky salt and let it sit until the chocolate sets. Store any leftovers in an airtight container, though we suspect there might not be any once your friends and family get a taste of these.
