How to Make Chicken Tinga Tostadas Using a Rotisserie Chicken
“This is what I make for dinner when I get the Costco rotisserie chicken,” wrote one commenter who was already firmly on the same page as Hrna. “Def adding this to the dinner rotation,” added another.
We absolutely love the idea of picking up a rotisserie chicken, making a quick sauce and treating ourselves to a plate of chicken tinga tostadas. We love the tangy tomato sauce, the crunchy tortilla—and all of the fun toppings. It's a way to turn dinner into a party in 30 minutes!
As per Hrna’s instructions, to make these at home for yourself, you’ll want to heat a skillet over medium heat and add some oil. Toss in tomatoes, onion and garlic, cooking until the veggies are slightly toasted. After about 5 minutes, toss the mixture into a blender and blend with salt, pepper, chipotle peppers, oregano ½ cup of water and bouillon until smooth.
Next, shred your rotisserie chicken and transfer the meat to a bowl. Set that aside and heat up some oil in the same skillet. Add ½ a sliced onion and cook until the onion is translucent. Pour in the sauce and simmer the mixture for a couple of minutes. Stir in the chicken and let everything simmer over medium-low for another 5 minutes or so.
To assemble, you’ll either want to fry some tortillas or pick up some store-bought tostadas. Top each tostada with the chicken and your favorite toppings. Hrna uses shredded lettuce, avocado, Cotija cheese, Mexican sour cream and diced tomatoes, but this is your opportunity to get creative with what you already have in the fridge. Easy dinner activated!
