Saturday was a whirlwind of activity in my house. What is Lazy Lasagna?

Lazy Lasagna is exactly what it sounds like: all the deliciousness of lasagna without the hassle. The secret? Frozen ravioli replaces traditional lasagna noodles, eliminating the work of boiling the noodles and layering the casserole. Here’s how it works:

You will need frozen ravioli, marinara sauce, shredded cheese and ground meat (this is optional). The beauty of this recipe is its versatility—you can mix and match sauces, ravioli, meats and cheeses to suit your taste.

To make this "lasagna," start by preheating your oven to 350°. Layer the frozen cheese ravioli in a baking dish and spoon marinara sauce over it. Sprinkle that with Italian seasoning (and any other seasoning you like) and add a layer of shredded mozzarella cheese. Repeat the process for a second layer. For the top layer, use ravioli and shredded cheese but skip the sauce.

Once your lasagna is assembled, bake it for 20 minutes until it is bubbly and golden.

For my version of Lazy Lasagna, I kept it meatless and used cheese ravioli, shredded Parmesan, shredded mozzarella and Bertolli marinara sauce. Simple, quick and oh-so-satisfying.

I shared this recipe idea with a friend and she had shredded mozzarella, shredded chicken, Alfredo sauce and cheese-and-spinach ravioli on hand, so she made her Lazy Lasagna with those, which sounds amazing, too!

How Did It Taste?

Sadly, I couldn’t try it myself because it wasn’t gluten-free, but the reviews from my family were glowing. Four of my kids, my husband, and my mother-in-law devoured it. Two of the kids went back for seconds, and my husband had to exercise serious self-control to avoid grabbing thirds. My mother-in-law insisted I write the recipe down so she could make it at home and share it with her friends. Safe to say, Lazy Lasagna was a hit!

Will I Make Lazy Lasagna Again?

Absolutely! This dish is now firmly planted in our regular meal rotation. Not only is it delicious, but it’s also quick to make, easy to clean up and incredibly budget-friendly. Feeding four kids and two adults for just $15? That’s a win in my book.

That said, as much as I love this speedy dinner, nothing beats my husband’s homemade lasagna (which can be made gluten-free). His version, with layers of tender noodles, slow-cooked sauce and perfectly seasoned meat, is in a league of its own. Lazy Lasagna is perfect for busy nights, but when we have the time, real lasagna still reigns supreme.

For those chaotic days when time is short, though, Lazy Lasagna is the meal we all need in our back pockets. Trust me, it’s worth a try!
