The Genius Salmon Recipe Fans Say is 'Definitely a Keeper'
Salmon may be the crown jewel of healthy eating, with its omega-3 fatty acids, protein and vitamins D and B12, but I don't usually care for it. However, my kids love it! Its flavor can be a bit much for me (as are most fish recipes). Still, I've been looking for more ways to cook this healthy fish that don't take up too much of my time and give me a flavor I can enjoy.
I recently ran across this recipe from one of our favorite food content creators, Diane Morrisey (@dianemorrisey) and I knew it was the recipe for me. Diane is a mom of six, like me, so she knows quick, delicious and nutritious dinners are a must, and fans say this recipe hits all the marks.

Why You Need to Make Honey Mustard Panko Salmon ASAP
Diane said this salmon recipe is similar to one that she's made for years from Food Network and she recently saw a honey mustard version via food creator Gal Shua-Haim (aka @somethingnutritious). Both of those recipes inspired her to make yet another version, a hot honey mustard panko salmon.
Diane lists the full recipe in the caption of the video, but first, you'll mix smoked paprika, garlic powder and salt and pepper and rub that mixture on 1 pound of salmon. Mix Dijon mustard with honey (or use bottled honey mustard) and pour that on the salmon, using a pastry brush to make sure the fish is evenly coated.
Next up, the panko topping, which is just panko breadcrumbs, olive oil, parsely and some salt. Sprinkle that on top of the salmon and bake at 425° until the fish is done to your liking (Diane usually cooks it for 12 minutes or so).
As the fish bakes, the panko topping gets nice and crispy and the honey mustard bakes into a sticky glaze. It's crispy and savory and tangy and a little sweet—all the things that we want in a simple weeknight dinner (or any dinner, for that matter).
To bring it all together, Diane serves the finished fish with a generous squeeze of lemon. Yes, please!

We bet teriyaki sauce would also make a good glaze. You can also add more or less salt and some pepper or red pepper flakes to give the fish a little heat.
I also love that it took about ten minutes to prep and less than 15 to cook, which means I can cook some yummy salmon for my kids in less than 30 minutes—and I really love that!
