The Super Easy Banana Muffin Recipe You Should Have Memorized

Banana muffins are my go-to when I have overripe bananas staring me down from the counter. There’s something so satisfying about transforming those spotted, squishy bananas into warm, golden muffins that make the whole house smell amazing. I love baking a batch on the weekends because they’re perfect for breakfast, snacks or tossing into lunchboxes for the kids. Sometimes, I sneak in chocolate chips or walnuts to keep things interesting, but even plain, they’re a hit.

Baking banana muffins is a delicious way to avoid food waste and make everyone happy in the process, but sometimes I don't have a ton of time to make them. That's why this easy recipe from content creator Shannon Doherty (@athomewithshannon) is so needed! It's easy to remember and easy to bake, so it's definitely one you need to have memorized.

Banana Muffins As Easy As 3-2-1

Shannon says these are her favorite banana muffins, and it's easy to see why! They're "so easy" and kids love them.

"You guys are going to be obsessed with this," she says in her TikTok video before showing us just how easy these muffins are to whip up.

She peels three bananas and breaks them into large pieces before she tosses them into a bowl. She then pours two cups of flour and one cup of sugar on top of the bananas. She adds one egg, a half cup of oil and one teaspoon of baking soda to the bananas and then mashes the eggs and bananas until they blend into the other ingredients. Mix everything up until you have a sticky dough, then divide it among the wells of a muffin pan lined with muffin papers. (You can also skip the muffin papers, but just be sure to grease the pan well before adding the batter.)

Next, bake at 350° for 25 minutes until the muffins are light golden. And that's all it takes to make easy one-bowl banana muffins. The best part? If you can remember 3-2-1 you can commit the recipe to memory so you can whip up a batch anytime.

I can't wait to give these a try! They look so fluffy and moist without a lot of unnecessary ingredients and I know my kids are going to enjoy them. You can toss in a handful of walnuts or chocolate chips, or top it with some sea salt or a sprinkle of cinnamon to dress it up or stick with this simple recipe and wow your family for breakfast!
