Between the sun setting earlier, the prices continuing to sky-rocket and the general struggle of making it through January 2025, now is a great time to use hacks that can save you time, money and sanity.

My go-to hobby during times like these is to bake something easy and fun, like a box of cake mix. However, the cost of eggs is so high and the ingredient is called for in nearly every single boxed cake mix you find in grocery stores. In such a situation, what's a cake-loving girl like me to do? Crowd-source, of course!

Reddit is filed with so many delicious and genius food hacks that provide easy solutions to any cooking conundrum you can think of. Through my recent doom scroll, I found a cool way to make a box of cake mix without eggs. To make boxed cake mix without relying on any of the ingredients called for on the package directions, just add in a can of soda.

Why Add Soda to Boxed Cake Mix

As a seasoned baker, I've heard of Coca-Cola cakes and 7-Up cakes, so it made so much sense to add soda into boxed cake mix. Soda contains carbon dioxide bubbles, so it acts as a leavening agent even without the need for oil or eggs. The bubbly carbonation helps the cake rise up, have enough structure, and makes them super fluffy and light when it bakes up. What's more the soda will impart a unique flavor to the cake, making each bite feel like a true celebration in your mouth.

While I found this hack on Reddit, apparently, it's an age-old trick. One of my friends even told me that her Nana used to make this all the time for her church group when she was younger.

"I use Duncan Hines boxes and soda all the time! I've done cherry coke + devils food mix for a Black Forest-like taste, but my favorite are lemon mixes with sprite," says one Redditor.  "Polar makes a Chocolate Fudge soda which obviously goes nicely with chocolate cake," says another.

How to Make Boxed Cake Mix with Soda

To the dry mix of one box of cake mix, pour in 12 ounces of your choice of soda. Stir to combine. Pour the batter into a well-oiled and flour-dusted pan Pro-tip from the Reddit post I referenced: "for best results pour soda slowly, to keep gasses in batter." Bake cake according to the package directions. That's it!

My Honest Thoughts About the Soda and Boxed Cake Mix Hack

Imagine this: I spent more time trying to decide on a fun combo of soda and cake mix than actually making the cake!

I decided on Funfetti cake (a classic that takes me back to my teen years) with Cherry Sprite. The result was a pillowy, cherry-scented, rainbow sprinkle-flecked cake that was sweet, fluffy and bursting with nostalgia and pure happiness.

After one bite, I started to contemplate other combinations—ginger ale and spice cake, root beer and devil's food, maybe cream soda and yellow cake? Not every baking hack is a winner, but this one? I'm definitely sold.
