Peak harvest for tomatoes runs from July to September, and you also can’t find better cucumbers than in between those months.

When that happens, there are certain dishes that outshine the rest. That’s the case with this marinated cucumber tomato salad recipe, which comes mom-approved from our very own Senior Video Producer Nicole McLaughlin. This recipe is her mother’s go-to, and it’s easy to understand why: The dish is perfect for the season.

What Makes This Cucumber Tomato Salad So Great?

Probably the simplicity. The quality of the ingredients helps this recipe shine because there aren’t that many of them. Use fresh cucumbers, tomatoes, and onions, and well as good quality oil, white and red wine vinegar, sugar, salt, and pepper. That’s all.

Heirloom tomatoes are great for this recipe, but I suggest Sun Gold tomatoes, which are still very much in season and are beloved here at Allrecipes.

“Sun Gold tomatoes are a variety of cherry tomatoes. They are small, orange, or yellow cherry tomatoes that are bred to be extra sweet and juicy, with an almost floral flavor,” says Allrecipes Editor Courtney Kassel. “They usually arrive in markets in late July and last until the end of August or September”
