Along with zucchini, eggplant is one of the most versatile of summer veggies! It's one of the best low-carb foods, and keto-friendly eggplant recipes make excellent comfort foods. There are so many things you can do with them, from pizza and lasagna, to dips and salads. You can even substitute eggplant in many summer squash recipes, like eggplant fries and eggplant chips.
Eggplant can be pretty mild in flavor if you choose it well. Make sure you are picking up firm, glossy eggplants that feel heavy and don't have any soft spots. This will avoid any bitterness.
When is Eggplant In Season?
Fortunately, it's still eggplant season through the end of October, so enjoy it at its peak while you can! You can still find eggplant in stores after that, but the best time is July through October.
