How to Make Grilled Cheese 10x Better, According to a Food Editor
Even if you think you know how to make a grilled cheese, a few minutes on grilled cheese internet will have you questioning everything. Some folks will tell you to slather it with butter or mayo. Others tell you to use Hawaiian rolls instead of the "traditional" sandwich bread. Some suggest making it a sheet pan, air-frying it or using a combination of different cheeses.

All of this to say, making a grilled cheese is intensely personal and from what I can tell, every method has a valid reason (or two) for existing. What makes me qualified to say that? As a food editor, I've spent a lot of time on grilled cheese internet studying other people's preferences. So much so that I've never stopped to ask myself about MY platonic ideal grilled cheese—until now! The trick I use to make my perfect grilled cheese is to use sriracha mayo and add pickled jalapeños.
Why I Add Sriracha Mayo to Grilled Cheese
When spread on the outside of a grilled cheese, regular mayo will help the bread slices turn a crisp, golden brown without burning like butter can. Because you've bought yourself some cooking time with mayo, you can be sure that the cheese inside melts properly. Sriracha mayo, a condiment made from the combination of sriracha and mayo, has the same effect but it adds a layer of spice on the outside of the bread. It also pairs very well with the other ingredient I love to add—pickled jalapeños.

Why I Add Pickled Jalapeños to Grilled Cheese
I'll get straight to the point: because they make a grilled cheese taste like a jalapeño popper, one of the best bar snacks in all the land. Grilled cheese studded with pickled jalapeños is cheesy, spicy and molten. What else could you ask for?
And because the pickled jalapeños are rather mild and have a touch of tangy sweetness to round everything out, your sandwich won't have you looking like a celebrity on an episode of Hot Ones. Working in tandem with the sriracha mayo, pickled jalapeños make what I consider the ultimate spicy lover's grilled cheese.

How to Make a Spicy Grilled Cheese
Spread a thin layer of sriracha mayo on one side of two bread slices. (I like the sriracha mayo from Lee Kum Kee, but you can also make your own.) Arrange one slice of bread, mayo side down, on a cutting board and top with a slice of good melting cheese (I love Kraft singles), then a few pickled jalapeño slices. Top with one more slice of cheese and the other slice of bread. Cook your preferred way of cooking grilled cheese until the sandwich is golden and crispy all over. Dig into your spicy girl grilled cheese!
