The Genius Recipe That Has Us Rushing Out to Buy Butternut Squash

Fall cooking is all about creating cozy dishes with the best the season has to offer: pears, apples and all of the squash. We love pretty much any and all squash, but we're especially fond of butternut squash. The long, bulbous, pear-shaped squash is easy to find and it at home in savory and sweet dishes. It's sweet and nutty and perfect for roasting.

We often roast and puree butternut squash to make soup or pasta sauce, but one recent viral recipe reminded us that there's so much more we can do with this versatile veggie. Content creator @boroughchef (real name Beth) shared a butternut squash and mozzarella tart on her Instagram page and it looks absolutely amazing.

How to Make a Butternut Squash Tart

The tart is "super simple and a total showstopper," Beth wrote in the caption to the Instagram video showing the dish, and that's a very accurate description.

To make it, you need a large butternut squash, puff pastry, butter, honey, rosemary, a ball of mozzarella, hazelnuts, basil leaves, red pepper and salt and pepper. If you want the exact amounts, Beth listed them in the caption of the video.

To make the tart, cut the butter into small pieces and scatter it in a skillet with a drizzle of honey. Cut the squash into rounds and arrange the squash circles over the butter and honey, overlapping the squash as needed. Sprinkle the squash with rosemary, salt and pepper.

Next, cut the puff pastry into a round that's roughly the same size as the skillet. Arrange the pastry on top of the squash and tuck it in around the edges. Pierce the pastry with a sharp knife in various places to allow the steam to escape. Place on medium heat on the stove for five minutes, then bake in the oven for 30 minutes.

Once it's done, let the dish rest for about 5 minutes to let it cool slightly and help make it easier to get out of the skillet. Working quickly and carefully, invert the tart onto a platter or cutting board (the squash will be on top). Top the tart with the mozzarella, hazelnuts, red pepper flakes and basil leaves.

"Wow showstopper!" someone commented on Beth's post. "This is stunning!" another person said. We love a dish that's delicious, simple and pretty. After seeing this video we're seriously considering adding this dish to our Thanksgiving lineup.
