Garlic & Thyme Chicken

8 chicken thigh fillets
1 tablespoon olive oil
4 fresh cloves garlic, sliced
2 tablespoons fresh lemon thyme leaves
150g packet baby spinach
1/2 red onion, sliced
1/4 cup each shaved parmesan, pitted olives and balsamic dressing

Method
1. Place chicken thigh fillets, olive oil, garlic and lemon thyme leaves into a shallow dish. Season with sea salt flakes and pepper. Allow to marinate for 10 min.
2. Meanwhile, in a salad bowl, combine the baby spinach, onion, parmesan, olives and dressing. Toss to combine.
3. Preheat a char-grill pan. Cook chicken for 4-5 min each side or until cooked through. Serve with spinach salad.
