When I was preparing for the arrival of my second child, meal planning took on a whole new level of importance. I was exhausted from the pregnancy, working full-time, and taking care of a kindergartener who was home from school for much of the year due to the pandemic. As a result, I was always looking for easy, nutritious dinner ideas that also felt fun.

One of my family's favorite staple dishes at the time was a riff on a no-fuss Bon Appétit recipe for chickpea and chorizo tostadas that I paired with a creamy lime-cilantro yogurt base and rudimentary slaw. I've broken them into large pieces and used them to make nachos and chilaquiles, and I've even served them with salsa and guac in a pinch when we were craving a crunchy snack.
