Apple cinnamon loaf
This is delicious and easy to make – excellent for beginners. It’s a firm customer favourite at Paleo Café and is great for lunchboxes for the whole family! Makes 1 loaf Prep time 30 minutes Cooking time 40 minutes (+ cooling time) Ingredients 2 apples, peeled, cored and cut into 1cm cubes 1/4 cup coconut oil 1 tsp ground cinnamon 6 eggs 1/4 cup honey 2 cups almond meal 1/4 cup coconut flour 1 tsp bicarbonate of soda Method Preheat oven to 170°C. Line a loaf tin with baking paper. Place apples, oil and cinnamon in a small non-stick saucepan and bring to the boil. Reduce heat to low and simmer for 10-15 minutes or until apples are soft. Set aside to cool. While apples are cooling, place the eggs and honey in an electric mixer and beat on high speed for 3-5 minutes or until pale and fluffy. Reduce speed to medium, add the almond meal, coconut flour, bicarbonate of soda and apple mixture, and mix until well combined. Pour mixture into loaf tin and bake for 40 minutes or until a skewer inserted into cake comes out clean.
