How to Make No-Bake Brownie Batter Bites

For these, you'll need heat-treated all-purpose or almond flour (more info on that process in a second), cocoa powder, sugar, melted butter, milk and powdered sugar (for rolling).

If you’ve never heat-treated flour before, don’t skip this step! Because raw flour can have bacteria, warming it up makes it safe to eat raw. Simply spread the flour in a nonstick pan and heat it over medium heat for about five minutes, stirring occasionally. If you prefer, you can microwave it in 30-second bursts, stirring in between, for about two minutes. This also gives it a slightly toasty, nutty flavor. Let it cool before using.

In a large mixing bowl, whisk together the heat-treated flour, cocoa powder and sugar. Add the melted butter and milk, then stir until the mixture comes together into a thick, fudgy dough. If it feels too dry, add an extra splash of milk.

Using your hands, scoop out small portions of dough (about a tablespoon) and roll them into balls. Pour some powdered sugar into a shallow dish and roll each brownie bite until fully coated. This not only makes them look extra fancy (hello, bakery vibes) but also adds a hint of sweetness to balance the rich cocoa flavor.

Enjoy immediately or store them for later, if you can resist eating them all at once! They'll stay fresh in an airtight container in the fridge for up to a week. They also taste amazing frozen!
