The Simple Slow Cooker Pork Recipe That’s My New Favorite Winter Meal

Comfort meals are the heroes of long, cold winters. When it’s all-around dreary, nothing beats the cozy warmth of a hearty meal that just makes you feel good. Creamy soups, tender pot roasts, buttery grilled cheese—these comfort foods soothe the soul and satisfy the belly, making chilly days a little more bearable.

For busy families like mine, slow cookers are the dinnertime MVPs, especially when you want to make something warm, hearty and easy. Toss in your ingredients in the morning, and by evening dinner is served! They’re perfect for juggling hectic schedules while still putting something wholesome and delicious on the table.

But the same old comfort meals can lose their magic after a while. Sure, chili and beef stew are amazing, but after the fifth time in a month, they start feeling a little meh. That’s why discovering a new, slow-cooker comfort dish feels like finding a hidden treasure. It’s a win-win—a fresh, exciting meal that’s just as easy to prep as your go-to classics.

That's why I love this slow-cooker meal that content creator Stephanie Gigliotti (@stephgigliotti28) shared on TikTok. It's a comfort dish that is similar to the one I make, but it adds a twist that looks absolutely delicious.

Elevate Your Slow Cooker Pork With This Simple Recipe

Stephanie said that the slow-cooker Apple Cider Pork was one of her most popular recipes in 2023. People do love a recipe that is easy and tastes great!

You can get the full recipe on Stephanie's website, but to sum it up you'll need a large pork tenderloin, butter, onion, apple cider, apple cider vinegar, chicken bullion, mustard, salt, pepper, garlic and cornstarch.

To make this, you slice the onion and brown it in a skillet in some butter over medium heat for a minute or two. Add the onion to the Crock Pot.

Season the pork loin with salt and pepper and sear it in the same pan that you used for the onions. Place that in the Crock Pot.

Whisk the apple cider, apple cider vinegar, garlic and chicken bullion together in a bowl and pour the mixture over the pork in the Crock Pot. Cook on low for 6 hours.

Once it's done, shred the pork and put it on a platter. Strain the juices from the crockpot into a pot. Whisk some cold water and cornstarch in a bowl and add that mixture to the juices. Heat over medium-high heat, whisking constantly, until the mixture thickens into a gravy. This will take around five minutes. Serve the gravy with the pork. Steph puts some pork on top of mashed potatoes and then pours the gravy on top and that sounds like our ideal dinner.
