The Twin Peaks and Sex and the City star is big into roasting his cauliflower, but he doesn’t just toss a head in the oven and hope for the best. Instead, he told the website Family Style that he has a go-to recipe called Cauliflower Garcia that sounds mouth-wateringly good. It involves a handful of common ingredients: garlic, cumin, paprika, Parmesan cheese and a generous amount of olive oil.
By the way, this isn’t just a random celebrity recipe. MacLachlan is very into food (his Instagram is nearly all food posts) and even owns his own winery in Washington state. Suffice it to say that the guy knows what he’s doing in the kitchen.

There are so many reasons to love this cauliflower recipe. For starters, it uses this healthy vegetable as a base. One cup of cauliflower is only 23 calories (without the olive oil and Parm), but delivers nearly two grams of fiber, 20 milligrams of calcium and 274 milligrams of potassium. So, it’s giving you a lot in the nutrition department. Plus, Kyle's cauliflower is really easy to make. You can prep the veggie, toss it in the oven and let it cook while you’re doing other things.
To make sure that the cauliflower gets nice and crispy and browned (instead of steaming), MacLachlan puts the baking sheet into the oven while it's preheating. Adding the cauliflower to the already-hot pan will help the veggie cook faster and get crispier.

To make Kyle MacLachlan’s roasted cauliflower, preheat the oven to 375° with a baking sheet placed inside. Break your cauliflower into florets and transfer them to a large bowl. Pro tip: You probably need a larger bowl than you think. You want to have plenty of room to toss everything together without pieces escaping. Drizzle the cauliflower with olive oil, give it a toss, then add some ground cumin, smoked paprika, salt, breadcrumbs and Parmesan cheese.
When the cauliflower is coated, splash some white vinegar over the top, toss the mixture again, and arrange the cauliflower on the preheated baking sheet. Let it roast for 45 minutes, stirring it occasionally. You’ll also want to sprinkle it with more Parmesan cheese about five minutes before the time is up to enhance the umami flavor.
