A few years ago, the X-Files and Californication star shared on The Chew that he likes to add a completely unexpected ingredient to his omelets: bananas. This breakfast confession was revealed when Duchovny was pressed for details about what he can cook. Things got interesting quickly.

This combination of eggs and bananas sounds, well, bananas, which even Duchovny acknowledged. “You’re disgusted, I can tell,” he said. Duchovny made it clear he’s an omelet guy because the egg dish is easy to cook. “That’s by default, really,” he said. “I can crack open eggs.” From there, he revealed that he likes to make omelets with cream cheese or bananas.

Bananas and eggs may seem like a curious combo, but Duchovny pointed out that it’s basically his take on cooking plantains. In case you’re not familiar, plantains are a starchy cousin of the banana, but they’re not as sweet as your conventional Chiquita banana. Plantains can be cooked in a variety of ways, but they're especially delicious fried. That, Duchovny argued, is why you’re just fine doing the same with bananas.

On the nutrition front, bananas contain a type of complex carbohydrate known as resistant starch, which can support good gut health and help maintain stable blood sugar. They’re also packed with potassium. Eggs add essential nutrients and protein, too, of course. Combined together, these two deliver more of a nutritional punch than your standard eggs and toast.

How to Make David Duchovny’s Banana Omelet

Duchovny was a little vague on the exact recipe, but he offered some details on how to get started. He kicks things off by focusing on the bananas. “Bananas in the pan with a little butter. I fry them first,” he said. From there, remove the bananas and set them aside. Then, whisk two eggs in a bowl, add a little salt, toss more butter into your pan, and add the eggs.

Because this is an omelet, we're going to assume that Duchovny adds the bananas on top of half of the egg once it's mostly cooked, then folds half of the cooked egg over the bananas. He didn't mention any other ingredients, but we could imagine that a spoonful of ricotta or even some cottage cheese would be pretty ok with the bananas. We're also thinking this might be a good use for under-ripe bananas, which are a bit starchier and slightly less sweet, which might give them more of a plantain vibe.
