Who can’t resist a ‘dessert for breakfast’ recipe?

This piece of goodness is from Prevention’s new Sugar Smart Diet book that contains loads of low-sugar recipes. Prevention’s online editor Christine Dominguez tells us why it’s her top pick.

“This Strawberry-Coconut Chia Breakfast is my favourite out of all of the recipes because it contains some of my favourite ingredients. Chia seeds are a complete protein source, containing all 8 essential amino acids, as well as iron, calcium, omega 3 fatty acids and fibre. And because chia seeds absorb many times their weight in water, they keep you feeling fuller for longer and turn into a great pudding-like texture! Mix them with the strawberries, coconut flakes, honey, almonds and almond milk and you pretty much have a delicious gluten-free, dairy-free, refined sugar-free breakfast.”

Serves 4

Prep time: 10 minutes + chilling time

Ingredients:

4 cups almond milk
3/4 cup chia seeds
1/3 cup unsweetened coconut flakes
4 tsp honey or maple syrup
3 cups chopped strawberries
4 tsp sliced almonds

Method:

1. Stir all ingredients together in a large bowl.

2. Divide mixture in air-tight containers or place plastic wrap over the large bowl and refrigerate for at least 4 hours or overnight, until the mixture is set like a pudding.

3. Serve chilled.
