No Eggs? No Problem! You Can Make Meatloaf Without Them—Here's How
Meatloaf is one of those classic comfort foods that people either love or avoid. I’ve never been a huge fan of meatloaf, but lately, I’ve been thinking about giving it another shot. With so many great recipes floating around on TikTok and Instagram, I’ve found myself tempted to make one. However, with the price of eggs these days, I don’t want to waste ingredients on something I might not even enjoy.
That’s why I was thrilled when I was watching cookbook author and content creator Matthew Bounds (@yourbarefootneighbor) make meatloaf and he mentioned how to make the recipe if you don't have any eggs. I'm listening! He shared the recipe on TikTok, and it looks absolutely amazing. I’ve tried several of his recipes before, and they never disappoint, so this one is going straight on my must-make list.

What Are the Ingredients in a Classic Meatloaf Recipe?
Traditional meatloaf is a staple in many households because it’s hearty, filling and easy to customize. A classic meatloaf recipe usually includes ground beef (or a mix of beef and pork), breadcrumbs, eggs, onion, garlic and seasonings. The eggs act as a binder, holding everything together and giving the meatloaf its signature texture. Some recipes finish things off with a tangy-sweet glaze made from ketchup, brown sugar and Worcestershire sauce.
Baked until golden brown, meatloaf is often served with mashed potatoes, green beans or other comforting sides. It’s the ultimate no-fuss meal that stretches ingredients and feeds a crowd.

How to Make Meatloaf With Mayonnaise
If you can't find eggs or are hesitant to buy them because they’re so expensive right now you might think that making a meatloaf might be a challenge. Fortunately, Bounds is here to save the day.
Bounds says that you can swap out eggs for mayo in your meatloaf recipe. The swap makes sense because mayonnaise is an emulsion made from eggs and oil. The mayo works as a binder while also adding moisture that helps keep the meatloaf tender. This simple swap ensures that the meat holds together perfectly without being dry or crumbly. Bounds eyeballs his recipes, but other online sources call for between 2 tablespoons and 1/4 cup of mayonnaise per pound of ground meat.
He said he had never shared his meatloaf recipe with his fans before because he didn't have one, but he gave a basic recipe in a TikTok video. You can go there for the full amounts and instructions, but you will need ground beef (or a mix of beef and pork, if you prefer), Worcestershire sauce, mustard, onion soup mix (you can also use salt, Italian seasoning, garlic powder and onion powder), mayo, crushed Ritz crackers (but he said you can use any type of bread or crackers you like), milk and pepper.
Preheat your oven to 375°. In a large bowl, mix all of the ingredients until well combined. Shape the mixture into a loaf and place it in a greased loaf pan or on a lined baking sheet. Bake for 45 minutes, then put ketchup or barbecue sauce on top and bake for another 10 minutes. Let it rest for 10 minutes before slicing and serving.
