I would be lying if I said my husband lacked skills in the kitchen. I also wouldn’t be married, because I’m pretty sure I have a second stomach where my heart is supposed to be. I’m lucky to be part of a relationship that splits kitchen responsibilities, because I think it’s fair to say that we all have days when we can’t compute making food for ourselves, but are more than happy to take on the dirty dishes.

My husband, Kyle, has a knack for making simple, comforting dishes. He’s especially good with barbecue and fettuccine Alfredo. He has a patience and resourcefulness that I often lack because I’m so fixated on the end product. It’s why I wrote his scrambled eggs into my wedding vows, and it’s why whenever I’m feeling sick, what I want most is for him to make me a grilled cheese sandwich.

I had a pretty bad cold recently, so in addition to some chicken noodle soup, I got to enjoy a Kyle grilled cheese sandwich or two. And I’m very pleased to report that he’s incorporated a new trick and ingredient to make his grilled cheese sandwiches more delicious than ever.

My Husband’s Secret Grilled Cheese Technique

Before I share my husband’s hack, I do need to disclose that it involves a polarizing ingredient: garlic aioli. While mayonnaise and aioli are not the same condiment, they do share a few characteristics, like taste and texture. A few shortcut aioli recipes even include mayonnaise as an ingredient. Lots of people make their grilled cheese with mayonnaise instead of butter, but Kyle takes things a step further by adding Boar’s Head Garlic Aioli Gourmaise to the inside of the sandwich, right between the bread and cheese. With butter on the outside and garlic aioli on the inside, it’s like the melted cheese is being cradled in a delicious bread blanket. My husband’s trick is simple, but it also allows a lot of room to experiment. Boar's Head not your cup of tea? Then by all means use your favorite condiment brand. If you want to make your own aioli, go for it—it’s your sandwich. Using homemade aioli gives you the freedom to explore different flavors, like cilantro and jalapeno (which would go great with a white cheese, like Cotija), harissa and cardamom (a match made in heaven for a milder feta) or sriracha (pair it with mozzarella, Cheddar, or even American cheese).
