The Genius Potato Recipe That Just Might Be ‘The Side Dish of the Season’

Side dishes often steal the spotlight at holiday meals because they bring variety and some creativity to the table. You can dress up your turkey, ham or prime rib, but it's easier to have fun with the sides. Plus, it's lower stakes to take a chance on a new side dish instead of trying a wild card recipe for your centerpiece main.

For many, sides allow for more experimentation and that's why many cooks (and eaters) gravitate toward them for holiday meals. For Thanksgiving, stuffing and mashed potatoes might be king, but once December rolls around, different potato recipes take center stage. Although you'll see mashed potatoes on some December holiday tables, you're more likely to see something like crispy roasted potatoes or creamy scalloped potatoes, both of which are great with meaty mains.

This year, we were looking around for something a little different to try on the potato front and ran across a great recipe from Carleigh Bodrug (aka @plantyou). She's declared this potato recipe the "side dish of the season," and after seeing the video we think there's some validity to her claim. And wnith more than 350,000 likes on Instagram, it seems we're not alone in our interest in these spuds. Here's what you need to know so you can make this dish for your holiday table.

What Are Garlic Potato Stacks?

This one is as simple (and delicious) as it sounds: thinly sliced potatoes are tossed in a garlic and herb oil, then stacked in muffin tins. Bake them until the potatoes are tender in the middle and crispy on the edges. Yum!

How to Make Garlic Potato Stacks

To make this side dish, start with sliced potatoes (Bodrug slices Yukon Gold potatoes and sweet potatoes and does separate stacks of each) and add some olive oil, salt, pepper, dry thyme, oregano, nutritional yeast and minced garlic to a bowl. Mix it well to create a "simple herb oil."

Next, toss your potato slices in the oil and stack them in a muffin tray. It doesn't have to be perfect, Bodrug said, and we love that this dish doesn't require precision to look as good as it does. Pro-tip: stack the potatoes a little higher than the top of the muffin tin because they will shrink as they cook.

Roast the potatoes for about 20 minutes at 350 degrees and you have a potato side dish that will wow your guests. We know we're impressed!

How to Customize Potato Stacks

What's the best part of a potato? It's versatile! Potato stacks are easy to customize for any occasion and palate.

For cheesy stacks, add shredded Parmesan, Gruyère or cheddar between layers. You can also sprinkle smoked paprika or chili flakes for a little spice.

For sweet potatoes, add brown sugar or cinnamon. For creamy potato stacks, pour a mix of cream and melted butter over the slices before baking. After they're done baking, you can fancy up your stacks with crispy bacon bits, caramelized onions, sautéed mushrooms or a dollop of sour cream.
