The Genius Bagel Trick We Wish We’d Known About Sooner
Bagels make a fantastic breakfast because they’re easy to take with you when you're on-the-go, and they are versatile and easy to customize. They can be paired with endless spreads and fillings, both sweet and savory. I love a good toasted egg and cheese bagel, but when I feel like something sweeter I opt for cream cheese and fruit.
Speaking of eggs and bagels—one of the biggest issues I have with pairing the two is that the eggs usually fall out of the bagel when I take a bite. But I recently ran across a genius solution by recipe developer, food writer and cookbook author Ali Slagle via Food52 that solves my bagel + egg conundrum. I can't wait to give it a try!

How to Make a Bagel Egg in a Hole
To make sure the egg stays in the bagel, Slagle cooks the egg inside the bagel, egg-in-a-hole style. Traditionally, an egg in a hole is made by cutting a hole in a piece of bread, toasting the bread (and the piece of bread from the hole) and cooking the egg inside the hole in the bread. It's quirky and cute and the egg white gets crispy and the yolk stays runny and there's also toast. No wonder this is a breakfast classic.
To make an egg in a hole in a bagel, you'll need one bagel, a tablespoon of butter, two eggs and salt and pepper. Cut the bagel in half and tear out some of the bagel around the hole to make it large enough for a yolk to fit inside.
Melt half of the butter in a skillet and place the bagel, cut side down in the skillet. Crack one egg into a bowl and then slowly pour it into the middle of the bagel. Season the egg with salt and pepper, then cover the skillet and let the egg cook for about three minutes. Using a spatula, transfer the bagel to a plate and repeat the process with the other bagel half.

We can't wait to try this! It would also be easy to customize. You can add bacon bits, chives and avocado on top, or season it with garlic and onion powder for something more savory. A drizzle of chili crisp would also be a delicious addition. And you could also use your favorite bagel flavor to keep things interesting.
