250ml milk
100gr unsalted butter
110gr flour
2 vanilla beans
1tbsp caster sugar
3 egg yolks
1 egg white
Method
Method
1. Bring to the boil the milk, vanilla, sugar and butter
2. Cool down till warm
3. Sieve the flour into the water, whisk until smooth
4. add one egg yolk a time and white at the end till silky
5. Pipe into hot oil 170 c with star nossle
6. Pat dry and dust with caster sugar
For chocolate sauce use 1kg of chocolate and melt with 1l of condensed milk, splash of rum and milk to thinner consistency
