Egg Nets with Fresh Vegetables

Ingredients

6 eggs
1/2 carrot, cut in very fine batons
1/4 cut snow peas, sliced very finely
1 eschallot, sliced very finely
2 tbsp lemongrass, sliced very finely
1 chilli, sliced very finely
1 garlic clove, minced
1 small piece ginger, grated finely
1/2 bunch coriander leaves
2 tbsp fish sauce
1 tbsp palm sugar
2 tbsp soy sauce
juice 1 lime

Method

1. Preheat a grill on medium-high. Line a grill tray with foil. Place the capsicums (skin side up) on the tray. Cook

2. Lightly whisk the eggs together and strain through a fine sieve. Refrigerate overnight.

3. Heat a non-stick frypan over a moderate flame and drizzle the egg mix using your fingers to create a web.
When just cooked, turn the net out and set aside. Continue making nets until the egg mix is used up.

4. Combine the salad ingredients and dress with the sauces, palm sugar and lime juice. Wrap the salad in the nets as if making a spring roll. Serve with chilli sauce.
