Zucchini Corn and Ham Frittatas

Ingredients

1 cup grated zucchini
1 small onion, grated
125g can corn kernels, drained
100g chopped ham
1/2 cup grated tasty cheese
1/2 cup self-raising flour
2 eggs, lightly beaten
1/4 cup sour cream
Salt and pepper to taste

Method

1. Combine zucchini, onion, corn, ham, cheese and flour in a large bowl. Stir in combined eggs and sour cream. Season with salt and pepper. Divide mixture among holes of a silicone 6-hole Texas muffin pan.

2. Cook in a hot oven (200C) for about 25 minutes or until set and lightly browned.

3. Serve frittatas warm or cold.
