Corn Fritters with Avocado Salsa

Ingredients

375g self raising flour
2 eggs light beaten
1/2 cup butter milk
420g corn kernels
310g can creamed corn
1 capsicum diced
1/2 bunch coriander leaves and stalks roughly chopped
5 pieces of broccolini


Avocado Salsa

1 diced avocado
2 whole Roma tomatoes, roughly diced
3 sprigs of coriander

Method

1. Mix eggs, butter milk & corn kernels together. Add this mix to the flour and mix well. Add capsicum and coriander to the mix. Let this rest, cover with cling wrap and leave for 10mins.

2. Place a non-stick pan over medium heat, drizzle bit of olive oil onto the pan, put 2 tsp of the mix onto the pan making a mound.

3. Cook each side for 1 minute until golden brown.

4. Place 4 cooked pieces of fritters on a plate, add avocado on top, place broccolini on top, sprinkle olive oil on top.
