Blueberry Microwave Muffins

Ingredients

2 cups wholemeal self-raising flour
1 tblsp raw sugar
2 tsp baking powder
2 eggs
1 cup
250ml milk
1 tsp vanilla essence
1 tblsp oil
125g blueberries, washed and drained
Cinnamon for sprinkling

Method

1. Mix the dry ingredients.

2. Beat in the liquids and fold in the blueberries.

3. Spoon into patty cases or well-oiled muffin pans and sprinkle with cinnamon.

4. Microwave, a tray at a time (elevated), for 3 to 4 minutes on high. Leave to stand, covered, for about 3 to 5 minutes after cooking.
