Traditional Christmas Ham with Red Berry Glaze

Ingredients

1 x 3 -6 kg leg ham,rind on (whole or half) (bone In or Out)
1/2 cup seedless raspberry jam
100ml cranberry juice
300g mixed red berries
1/2 cup cranberry juice
1/2 cup castor sugar
1/2 cupdried cranberries
Fresh red berries for garnish

Method

1. Pre-heat oven 190c for 10 minutes

2. Using a sharp knife remove the rind from the ham leaving the rind attached to the hock or bone. (this makes for easy carving)

3. Score the surface of the ham into a decorative pattern and place the ham into a deep baking dish.

4. Whisk together the raspberry jam & cranberry juice and spoon evenly over the ham.

5.Bake the ham roast in the pre-heat oven at 190c , 20 minutes per kg . Basting with jam mixture occasionally.

6. Whilst ham is roasting place the berries, cranberry juice, castor sugar, and dried cranberries into a saucepan and simmer stirring occasionally until liquid is thick and syrupy approx 12-15 minutes.

7. Allow roast ham to rest 10 minutes prior to slicing and serving with red berry glaze garnish with fresh berries.

The festive season is a great time for soft red berries , if preparing glaze out of season frozen berries maybe used in place of fresh
