Spicy Pork-and-Noodle Soup

Ingredients

2 sachets miso soup
400g rice noodles
Handful coriander, chopped
1 1/2 tbsp sesame oil
125g spring onions, sliced
1 garlic clove, crushed
1 small red chilli, finely chopped
5cm piece fresh ginger, peeled and grated
200g pork fillet, cut into 3cm strips
2 tbsp sherry or rice wine
75g shiitake mushrooms, sliced
100g baby spinach, chopped
Soy sauce, to season

Method

1. Boil a full kettle and make two mugs of miso soup, and set aside.

2. Soak the rice noodles in a wok in the remaining boiling water for four minutes, then drain and divide the noodles between four deep bowls.

3. Sprinkle with the chopped coriander leaves.

4. Crank up the heat so your wok is super hot. Add the sesame oil and swirl it around. Take the pan off the heat and add the spring onions, garlic, chilli and ginger.

5. Stir and return to the stove for one minute. Reduce the heat so the ingredients won't burn, then add the pork.

6. Stir for three minutes to cook the meat, then add the booze and mushrooms. When the mixture becomes sticky, stir in the spinach until it wilts.

7. Load the pork and spinach mix onto the noodles, pour over the miso and season with soy sauce.
