Jamaican ham with pineapple, lime and coconut salad

Ingredients

1 Woolworths Leg Ham, approx. 7kg
12 cloves garlic
6 eschalots
2 long red chillies
3 tsp ground allspice
1 tsp ground nutmeg
1 tsp ground cloves
½ cup dark rum
2 Tbsp cider vinegar
1 cup lime marmalade
1 cup pineapple juice
juice of 4 limes
1 Telegraph cucumber, peeled and cut into wedges
1 green capsicum, diced
1 cup diced pineapple
2 punnets cherry tomatoes, halved
1 bunch coriander leaves
1 Tbsp rice vinegar
2 tsp sesame oil
sea salt flakes and freshly-milled black pepper
1 cup toasted coconut flakes

Method

1 Preheat oven to 180°C. Use a small sharp knife to remove the ham skin, then score in fine parallel lines. Combine the garlic, eschalots, chillies, spices rum and vinegar in a food processor and puré until smooth. Rub onto the ham, then place in a roasting pan.
2 Pour 2 cups water into the roasting pan and cover with foil, then bake for 1½ hours. Remove the foil and bake for 20 more minutes. Combine the marmalade, pineapple juice and lime juice in a small saucepan and boil until thickened. Brush onto the ham and bake for 10 minutes, then repeat three more times, until the ham is glazed.
3 Toss the cucumber, capsicum, pineapple, tomatoes and coriander leaves in a bowl, then dress with rice vinegar and sesame oil. Season with salt and pepper, then top with coconut flakes. Serve with the ham.
