How to Make the Famous Grilled Cheese from Disney’s Hollywood Studios

I love a good grilled cheese, and when I saw the version from Disney’s Hollywood Studios, I knew I had to try it. I’ve never been there, but the food looks next-level amazing—and this sandwich? Pure cheesy perfection. Thankfully, I don’t have to wait for a Disney trip to enjoy it. I can make the magic right in my own kitchen.

What is the Famous ABC Commissary Buffalo Chicken Grilled Cheese?

Disney fans are enthusiastic about this sandwich that you can pick up at the ABC Commissary restaurant at Disney's Hollywood Studios in Florida. The studio-inspired restaurant is designed to make you feel like a Hollywood insider. The menu is full of American classics, but one of the fan-favorite menu items is the Buffalo Chicken Grilled Cheese.

The sandwich is made on sourdough with buffalo chicken, and three cheeses (Monterey, Provolone, Cheddar), plus cream cheese. It's served with a side of buffalo sauce in case you want to spice things up a bit more.

Disney’s Famous Buffalo Chicken Grilled Cheese Right At Home

Roice showed us how to make Disney’s Famous Buffalo Chicken Grilled Cheese and we may never go back to plain grilled cheese sandwiches.

Here’s how to make it: First, you'll need, cooked, shredded chicken (rotisserie works great), buffalo sauce (Frank’s RedHot is classic), ranch or blue cheese dressing and garlic powder. You can get the full amounts on Roice's Instagram page.

For the cream cheese spread, you'll need softened cream cheese, shredded cheddar cheese, shredded Monterey Jack cheese and ranch dressing.

For the sandwich portion, you'll need thick Texas toast-style bread, softened butter, softened, garlic powder, shredded cheddar cheese and shredded Monterey Jack cheese (for layering).

In a bowl, mix the shredded chicken with buffalo sauce, ranch or blue cheese dressing and garlic powder. Set aside.

In another bowl, mix the softened cream cheese, shredded cheddar, shredded Monterey Jack and ranch dressing until smooth.

Butter one side of each slice of bread and sprinkle with a little garlic powder. In his video, Roice spreads mayo on the outside to give it a crispier texture and tangier flavor.

Spread a layer of the cream cheese mixture on the non-buttered side of two slices. Top with a generous scoop of buffalo chicken. Sprinkle with extra shredded cheddar and Monterey Jack.

Place the other slices of bread on top, butter-side out. Heat a skillet over medium-low heat and cook the sandwiches for about four minutes per side, pressing gently with a spatula, until golden brown and the cheese is melted.

To enjoy these, slice them in half and serve with extra ranch or blue cheese dressing for dipping.

How to Make This Great Grilled Cheese Even Better

Here are a couple of ways to make this sandwich even better.

First, use a panini press for an extra crispy exterior. If you want it cheesier, add a slice of pepper jack for extra flavor!

Want even more flavor? Add crispy bacon for an insane upgrade.

This is definitely a next-level grilled cheese—cheesy, spicy, creamy, and packed with buffalo flavor and I am ready to make a batch right now!

This sandwich packs an incredible crunch, and we love that you can use pulled pork, ground sausage or seasoned hamburger if you want to change up the flavor. This is going to be a great weeknight dinner!
