The Chinese Way to Make Fried Rice 10x Better
Fried rice has become a staple in my kitchen because my kids absolutely love it. Unfortunately, I haven’t found a Chinese restaurant nearby that makes it just the way we like, so I decided to make it at home—and that has been a game-changer! I can customize it to fit their preferences, but I can also sneak in some extra veggies without them noticing!
Plus, it's not as hard as you think to make.
I start with day-old rice (a must for perfect texture) and heat it in browned butter, add scrambled eggs, and toss in a mix of peas, carrots and green onions. A splash of soy sauce helps add some flavor, but I’m always experimenting with other ingredients to elevate it, like diced chicken or leftover pork. I’ve even tried pineapple for a sweet twist that's similar to a dish I had at a restaurant in South Florida.
Fried rice is fast and easy to make, filling and versatile, but I’m constantly hunting for new tips and tricks to make it even better—especially because I know it can be better!

The Chinese Fried Rice That Has People Hooked
"This Chinese sausage fried rice has a hold on us (and we aren't mad about it)," the Food Network wrote in the caption of its Instagram post.
Fried rice originated in China more than 1,000 years ago during the Sui Dynasty as a way to repurpose leftover rice. It quickly spread across Asia, with each culture adding unique ingredients and it remains a beloved, adaptable dish worldwide.
Andy said this is the Chinese fried rice his mom would always make, and the star of the show is Chinese sausage and we also love the addition of chicken bouillon powder to the sauce to add even more umami to the dish.
To make it, you'll need rice, eggs, salt, sugar, oil, garlic, scallions, frozen peas, soy sauce, fish sauce, sesame oil, chicken bouillon powder and ground white pepper.

Tips For Making Perfect Fried Rice
Andy said you always want to start with cool rice so it doesn't clump as you fry it and that's a great tip to have!
He said he likes to prep all of his ingredients (which you can find on his Instagram page) before cooking because once you start, everything moves quickly. That's definitely a mistake I've made a few times.
Heat the wok and scramble your eggs with salt, sugar and oil. Cook the eggs in more oil in the wok, then transfer them to a bowl and set aside.
Cook the diced Chinese sausage in the wok with the scallions and garlic. Once it's crispy, add in the rice. Andy says to stir in the rice, but also press down as you go so that you break up the clumps of rice as it fries.
Add the sauce and stir it well, then add the frozen peas and the egg. Finish it off with some scallion greens and you have a quick, delicious dinner that everyone will love!
