Sweet and Sour Blueberry Parfait

Ingredients

1 lime
1 avocado
1 cup low-fat ricotta cheese
4 tablespoons honey, divided
1 cup fresh blueberries
1 tablespoon finely chopped fresh mint leaves + 4 sprigs for garnish

Method

1. Grate the lime zest from the lime. Squeeze the juice from the lime and set both aside.
2. Combine the avocado, ricotta, 2 tablespoons honey, reserved lime juice and reserved lime zest in the bowl of a food processor fitted with a metal blade or a blender. Pulse
12 times. Scrape down the sides of the bowl. Process, scraping the sides of the bowl as needed, for about 2 minutes or until smooth. Chill before serving, if desired.
3. Place the remaining 2 tablespoons honey in a microwaveable bowl. Microwave for 10 seconds or until softened. Add the blueberries. Toss to coat.
4. Add the chopped mint to the avocado mixture and stir to combine. Divide a third of the blueberries in the bottoms of 4 parfait or dessert dishes. Dollop with half of the avocado mixture. Top with another third of the blueberries, followed by the remaining avocado mixture. Top with the remaining blueberries. Garnish with the mint sprigs.
