Bill Granger's Lemon Chicken

Ingredients

2 tbsp plain flour
1 tsp Chinese 5-spice
100ml light-flavoured oil
4 chicken breasts (w skin)
1 lemon (in 8 wedges)
3cm ginger
80ml honey
80ml light soy sauce
Juice of 2 lemons
2 tbsp soft brown sugar
To serve: leaves from 1 small radiccio

Method

Preheat the oven to 180ºC.
Mix the flour and 5-spice with sea salt & freshly ground black pepper and toss the chicken in it until well cooked. Place your wok or large frying pan over medium-light heat. Add the oil and heat until hot. Add the chicken to the wok and fry for 3-5 minutes until the skin is crispy. Drain on kitchen paper.
Put the chicken on a baking tray with the lemon wedges tucked in around the edges. Roast in the oven for 10 minutes, until the chicken is cooked through.
Meanwhile, drain all but 2 tablespoons of the oil from the wok and return to the heat. Add the ginger, honey, soy sauce, lemon juice and sugar and simmer for 2-3 minutes until thickened.
Serve the chicken pieces whole or slice them, drizzle with the lemon glaze and serve with radicchio leaves.
