Summer pea salad

400g each snow and sugar snap peas, trimmed
2/3 cup bottled French dressing
2 teaspoons finely grated lemon zest
1 head butter lettuce, washed and dried
1 small white onion, finely sliced
100g fetta, crumbled
Method
Method
1. Plunge the peas into rapidly boiling water and cook for 2 min. Drain immediately and refresh in iced water. Drain thoroughly.
2. Place the dressing in a screw-top jar with lemon zest. Shake until combined. Season with salt and pepper. Toss peas, lettuce and onion with the dressing. Top with fetta cheese, to serve.
