Warm pasta salad

500g spiral pasta
270g jar sun-dried tomatoes in oil
1/3 cup balsamic vinegar
1 large onion, chopped
250g shortcut bacon, chopped
1/4 cup parsley, roughly chopped
1 punnet cherry tomatoes, halved
Method
Method
1. Bring a large pan of water to the boil. Add pasta and cook for 8-10 min, or until cooked. Drain well and return to the pan. Drain oil from the sun-dried tomatoes and stir through the pasta with vinegar. Cover and keep warm.
2. Chop sun-dried tomatoes and set aside. Heat a non-stick frying pan. Cook onion and bacon until golden. Add to pasta with sun-dried tomatoes, parsley and cherry tomatoes. Season and serve warm.
For a more substantial salad, toss through some shredded BBQ chicken.
