Sausage Sang Choy Bow

2 tblsps vegetable oil
8 thick sausages
1 carrot, thinly sliced
1 red capsicum, thinly sliced
410g can baby corn spears, drained, chopped
4 green spring onions, sliced
1/3 cup coarsely chopped fresh coriander
100g packet fried noodles
4 large iceberg lettuce leaves
Extra chopped coriander and sliced green spring onions, to garnish
SOY CHILLI DRESSING
1 tblsp soy sauce
1 tblsp oyster sauce
1 tblsp sweet chilli sauce

Method
1 To make soy chilli dressing, combine all ingredients in a small bowl. Mix well.
2 Heat half the oil in a hot wok. Add sausages in two batches. Cook, turning occasionally, until browned and cooked through. Remove from wok. Thickly slice.
3 Heat remaining oil in same hot wok. Add carrot, capsicum and corn. Stir-fry for about 5 minutes, or until soft. Return sausages to wok with dressing. Stir-fry until hot. Add spring onions, coriander and noodles. Stir-fry to combine.
4 Serve stir-fry in lettuce cups. Garnish with extra coriander and spring onions.
