Satay Beef Stir Fry

Ingredients

  • 4 teaspoons olive oil 

  • 4 sprigs spring onions, finely sliced

  • 400 g beef steak (porterhouse) cut into strips 

  • 4 cups broccoli, cut into florets

  • 2 carrots, sliced

  • 2 cups green beans, halved

  • 2 tablespoons peanuts, roughly chopped

Ingredients for sauce

  • 4 tablespoons peanut butter (smooth) 

  • 2 tablespoons tamari/or soy sauce

  • 2 teaspoons pure maple syrup

Directions

  1. Heat the olive oil in a frying pan or wok and add the spring onion. Sauté for 3-4 minutes, until golden.

  2. Add the beef steak and cook for 5 minutes to start to brown.

  3. Next, add the broccoli, carrot and green beans and cook for 5-7 minutes, to your liking

  4. Stir through the peanuts and remove from the heat.

  5. Combine the peanut butter, tamari and maple syrup to form a satay sauce. Add a splash of water or coconut milk if needed to reach your desired consistency.

  6. Stir the satay sauce through the stir fry and serve
