Satay Beef Stir Fry

4 teaspoons olive oil
4 sprigs spring onions, finely sliced
400 g beef steak (porterhouse) cut into strips
4 cups broccoli, cut into florets
2 carrots, sliced
2 cups green beans, halved
2 tablespoons peanuts, roughly chopped
Ingredients for sauce
4 tablespoons peanut butter (smooth)
2 tablespoons tamari/or soy sauce
2 teaspoons pure maple syrup
Heat the olive oil in a frying pan or wok and add the spring onion. Sauté for 3-4 minutes, until golden.
Add the beef steak and cook for 5 minutes to start to brown.
Next, add the broccoli, carrot and green beans and cook for 5-7 minutes, to your liking
Stir through the peanuts and remove from the heat.
Combine the peanut butter, tamari and maple syrup to form a satay sauce. Add a splash of water or coconut milk if needed to reach your desired consistency.
Stir the satay sauce through the stir fry and serve
