Jackie O's Simple Grilled Chicken is Tender, Flavorful and the Perfect End-of-Summer Supper

Though she was only the First Lady for two years (1961 to 1963), Jackie Kennedy is widely known as one of the most popular women to hold the title. Highly regarded as an international icon, Jackie Kennedy's style, her contribution as a cultural ambassador to the United States and her writings later in life have cemented her in history. And while there's plenty to talk about when it comes to her achievements, a certain recipe from her time on Rhode Island's Hammersmith Farm is what has people talking now.

Hammersmith Farm is often associated with Jackie Kennedy because it was her childhood summer home. Located in Newport, Rhode Island, it's said that the former First Lady spent many summers there and entertained many dignitaries at the home during her time as First Lady.

Her Grilled Spiced Chicken, which was reportedly served at Hammersmith Farm, is a reflection of Jackie's refined taste because it combines simple and sophisticated flavors. Infused with a blend of warming spices, this dish offers a perfect balance of savory and aromatic notes, making it a timeless classic.

Once I came across the recipe online, I knew it was one that I needed to try. So I grabbed what was needed, fired up the grill and gave it a go. Here's how it turned out.

How To Make Jackie Kennedy's Grilled Spiced Chicken

Begin by combining the yogurt with all the spices, ensuring they are well-mixed. Next, add the chicken pieces to this mixture, making sure each piece is fully coated. Let the chicken marinate for three hours.

Once marinated, line a grill with foil and place the chicken pieces on the grates. (NOTE: I cooked the chicken directly on the grates and didn't have an issue with sticking.) Grill the chicken until it's thoroughly cooked about 20 minutes.

What I Thought About Jackie Kennedy's Grilled Spiced Chicken

Jackie Kennedy's recipe is a unique take on grilled chicken, using a marinade based on plain yogurt. The preparation is straightforward, with the most time-consuming part being the three-hour marinating period. It's well worth the wait, though, because the yogurt soak helps make the chicken incredibly moist and flavorful.

The smokiness from the grill enhances the dish, adding a subtle depth to the spices. I enjoyed the chicken in two ways: first with a side of rice and sautéed kale and then as a pasta mix-in. It was great in both!

Overall, this recipe is a wonderful option for anyone looking to elevate their grilled chicken game with minimal effort.
