Tiramisu
Recipe by: Teresa Cutter The ricotta and yoghurt are packed full of filling protein and calcium for strong bones. The yoghurt also contains lactobacillus bacteria for a happy gut and to help prevent bowel cancer. Chocolate sponge: 3 organic eggs 2 tbs honey 2 tsp vanilla 35g good quality cocoa powder (sifted) Filling: 650g ricotta cheese 2 tsp vanilla extract 2 tbs honey ¼ tsp cinnamon 250g low-fat vanilla or natural yoghurt 125ml fresh espresso 125ml coffee liqueur cocoa powder 1 Preheat the oven to 180°C. 2 In a large bowl, combine eggs, honey and vanilla and beat on high for about 10 minutes until light and creamy. Fold in cocoa powder with a large metal spoon until just combined with eggs. 3 Line a large flat baking tray with baking paper and pour in the sponge mixture. Spread the mixture evenly about 1cm thick. Cook for 10 minutes until cooked through and firm to the touch. Leave to cool, then turn upside down and carefully remove by lifting out the baking paper. Slice into thirds. 4 Process the ricotta, vanilla, cinnamon and honey in a blender until creamy. Add the yoghurt and process again until combined. 5 Line the base of a dish with a third of the sponge. Combine the espresso and coffee liqueur then moisten the sponge liberally with it, using a pastry brush. 6 Spread a third of the ricotta filling over the sponge, then dust over the top with a little cocoa powder. Repeat this process two more times, finishing off with a layer of ricotta filling on top. 7 Dust with cocoa powder or a little dark grated chocolate just before serving.
