This Ginger-Spiked Cider Mule Will Be Your New Go-To Fall Drink

Ingredients

(1-liter) bottle fresh apple cider

(3-inch) pieces ginger, peeled and thinly sliced

strips lemon peel
1/2 c.
pure honey
Vodka, optional
Club Soda, chilled
Thinly sliced apple and candied ginger, for garnish
Directions
Bring apple cider, ginger, lemon peel, and honey to a boil in a medium saucepan over medium-high heat. Remove from heat and cool completely; cover and refrigerate overnight. Strain through a wire-mesh strainer.
Divide cider between glasses. Top with ice, vodka, if desired, and splash of club soda. Garnish with sliced apple and candied ginger.
