The Genius Soup Trick We Wish We'd Known About Sooner
There's something about a hot bowl of soup on a chilly day that's deeply soothing. Soup is versatile, allowing endless combinations of vegetables, proteins and grains. It's a great clean-out-the-fridge dish and there's a soup to please any eater.
Soup is also an easy thing to make at home. With just a handful of basic ingredients, you (yes, you!) can create a flavorful soup in under an hour. We usually just toss our ingredients into a pot when we're making soup, but we recently ran across a supersmart soup hack that leverages the oven and we can't wait to give it a try.

How to Make Roasted Butternut Squash and Tomato Soup
Content creator Leslie of @gathering.page took to social media to share not only her go-to Butternut Squash Tomato Soup, but a cooking technique that can be applied to other soup recipes.
"This was my first recipe to go viral last year, and for good reason! It’s extremely easy to make & so cozy. It’s a go-to for us in the cooler months!" they wrote in the caption of the video.

To make Leslie's soup, you need to preheat your oven to 425°. Place butternut squash, tomatoes, garlic, basil, onion, olive oil in an 8-by-8-inch baking dish; season everything with salt and pepper. Cover the dish with foil and bake for 45 minutes. We love this tip because it's a great hands-off way to cook your veggies and will also help concentrate their flavor.
Once the veggies are roasted, heat vegetable (or chicken) broth in a large pot and then pour in the vegetables, including all of the juices in the bottom of the dish. Blend it all with an immersion blender or pour it into a regular blender and give it a whirl. Stir in heavy cream and let the soup simmer for a few more minutes to help the flavors meld.

When we try this technique, we might use a baking sheet instead of a baking dish and leave it uncovered so all of the vegetables get nice and roasty toasty. The browned, caramelized bits will add tons of flavor to the finished soup.
