Freshly shucked oysters with lemongrass and finger lime

2 dozen oysters, opened & flipped
2 p coriander cress, snipped & washed
Dressing
1 lemongrass stalk
1 birds eye chilli, seeds removed & brunoised
2 finger limes, seeded
1 tbsp palm sugar
1 tbsp coriander, finely chopped
2 limes, juiced

Mix all of the ingredients together & serve a little on each oyster & top with coriander cress.
