Mussels In White Wine

Ingredients

Fresh mussels (about 500g per person)
1/2 cup of fish stock
Olive oil
Flat-leaf parsley
Garlic
Chopped tomato
1/2 cup white wine

Method

1. Use only fresh mussels and allow about 500 g per person. They should be closed. Scrub the outsides, and pull off their beards.

2. Put 1/2 cup of fish stock in the bottom of a pot with some olive oil, parsley and 1 chopped garlic clove. Heat the mixture and then throw in the mussels with 1 finely chopped tomato and 1/2 cup of white wine. Put the lid on the pot, turn up the heat and within 2 minutes they should have opened and put out their own tasty water.
