Even on days when you have time to cook, the Crock Pot can be a great tool to allow you some extra time to unwind while it does the work for you.
When it comes to Crock Pot cooking, chicken is the undisputed star for me. Done right, it comes out juicy, tender and infused with lots of flavor, soaking up every seasoning and sauce. I’m always on the hunt for new recipes that my family will love, and I think I’ve just found a new favorite. I know it has all the makings of a winner because it's similar to a crockpot meal I already make.

What Is Crock Pot Mississippi Chicken?
Luke said that this Crock Pot Mississippi Chicken is an "easy dinner my family always loves. This is so good served over mashed potatoes, rice or made into sandwiches!"

This is a twist on the classic Mississippi Pot Roast, which is a flavorful, tender beef dish made by slow-cooking a chuck roast with ranch seasoning, au jus mix, butter and pepperoncini peppers. This savory, tangy, and slightly spicy roast is perfect for hearty meals, and it's also great served over mashed potatoes, rice or as a sandwich. Simple yet incredibly delicious, and I am sure the chicken version is just as tasty.
You can get the full list of ingredients in the caption of Luke's Instagram post, but you will need chicken breasts, an au jus gravy packet, a ranch seasoning packet, black pepper, paprika, onion powder, garlic powder, minced garlic, chopped onion, a jar of pepperoncini, butter and an optional homemade gravy made of butter, flour, salt, pepper and beef broth.
To make this meal, spray your Crock Pot with cooking spray and add your chicken breasts. Season the chicken with black pepper, paprika, garlic powder and onion powder. Then add in some of the au jus gravy packet and the ranch seasoning packet.
Add the minced garlic, onion and some pepperoncini, as well as just a little bit of the juice from the jar. Place a few slices of butter on top of the chicken, then cover and cook on low for 4 to 6 hours, stirring about halfway through.
Once the chicken's done, shred the chicken and serve over mashed potatoes or rice, which you can top with homemade gravy, if you'd like. We think this is a perfect winter meal and it's great for nights when you need some quick leftovers to feed the family.
